煲仔饭的传统品种主要有豆豉排骨饭、腊味饭、板鸭饭、黄鳝饭、田鸡饭、咖喱牛肉饭等，正宗的要用丝苗香米，取其坚实细密晶莹，口感好、滋味浓又易被汤汁浸烂。一般而言，生米生菜一锅煮，以豆豉排骨饭为例，洗米上锅，煮六七成熟时揭开盖子，加入调好味汁的生排骨，另加二棵芥兰，直到焖熟。如果是黄鳝或田鸡时间可短一些，若是牛肉还要再长一点，要注意的是饭菜要兼顾，这是火候了。
